Halloween Fun & Spooky Treats

Pumpkin Carving and Spooky Treats....
I know there are many opinions on “How old is too old to trick-or-treat” but there is rarely judgement passed on “how old is too old to carve pumpkins”. THANK GOODNESS! I love Halloween and while I hadn’t carved a pumpkin until I was 25, I have not missed a year since. Even though both of our kids are in college, the last couple of years they still came home to carve pumpkins. This year we noticed on their social media that they had already carved pumpkins at Cole’s fraternity. Chuck and I thought we would end up carving all alone this year until we received surprise visitors yesterday. Yes, at 20 and 21 they still came home to carve pumpkins. I had to come up with some snacks to serve so I made these yummy mummies complete with Emily G’s Roasted Red Pepper Jam. YUM- ME! I also added a little Emily G’s Tipsy Onion and Garlic Jam to my Deviled Eggs. Check out these Spooktacular Recipes.
Jalapeno Mummies with Emily G’s Roasted Red Pepper Jam
10 Jalapeño Peppers
8 oz Softened Cream Cheese
8 oz Pepper Jack Cheese shredded
1/2 teaspoon minched garlic
Pinch Salt
Pinch Pepper
1 Scallion chopped
Pillsbury Crescent Rolls
½ jar of Emily G’s Roasted Red Pepper Jam
Preheat your over to 400° in line a baking sheet with parchment paper. Wash then Slice your jalapeño peppers in half lengthwise and scoop out the inside. In a large mixing bowl mix pepper jack cheese, scallion, cream cheese, garlic, pepper and salt. Fill your jalapeño peppers with your cheese mixture. Unroll your crescent rolls into rectangles then slice into strips and wrap around pepper. Bake for 10-12 minutes. Right when you take your mummies out of the oven, add two candy eyes. Serve warm with Emily G’s Roasted Red Pepper Jam.
****Making Mummies for children that may not like the spice of a pepper? Substitute cocktail sausages (halved and stuffed) instead of peppers.
Deviled Eggs
Boil 6 eggs. Cool, peel and cut in half. Mash 6 hard-boiled egg yolks, 2 tablespoons mayonnaise or yogurt, 1 ½ Tablespoon Emily G’s Tipsy Onion and Garlic Jam, Fill the eggwhites with the yolk mixture. Top with chopped chives and crumbled cooked bacon.
We had way too much fun carving our pumpkins and we decided that we weren’t too old to Trick-or-Treat so Chuck and I got our costumes ready! HAPPY HALLOWEEN!!!!
