Bourbon Bacon BBQ Chicken

2 lb chicken breast
2 t kosher salt
1 t ground white pepper
½ t garlic powder
½ t onion powder
2 T paprika
3 T packed brown sugar
1 T smoke paprika
6 slices uncooked bacon, cut into small
pieces

 


BOURBON BBQ SAUCE 
1 ½ T worcestershire sauce
2 ½ t smoked paprika
½ t garlic powder
½ t salt
½ t ground pepper
½ c Emily G’s Jalapeno Raspberry Jam
1 t dry mustard
1 shot bourbon

 

In a food processor, combine all the BBQ chicken ingredients except the BBQ sauce and
chicken. Pulse until completely smooth. It should look like paste when done. Place the
chicken in a Ziploc bag and rub the chicken with the bacon paste.


Light grill and heat to medium-high. Then place chicken on grill until cooked through.
While the chicken is cooking make the BBQ sauce in small pot on the stove by
combining all the ingredients. Brush the bourbon BBQ sauce on the chicken and cook
for an additional minute on each side. Serve with remaining BBQ sauce


Hint: Making the bacon paste and marinating the chicken for 24 hours before cooking
is best.
