Spicy Bacon wrapped Shrimp
20 large shrimp, peeled and deveined
10 strips of bacon, partially cooked in the microwave
1/2 c Emily G's Strawberry Chipotle Jam
1 T Dijon mustard
¼ t minced ginger
1 t lemon juice
Pat shrimp dry. Cut bacon in half. Wrap bacon around shrimp and secure with a toothpick or skewer. Whisk jam, mustard, ginger and lemon juice together. Brush the bacon-wrapped shrimp with half the sauce. Preheat broiler or grill on high. Place shrimp on pan or grill and cook for several minutes on each side until bacon is crisp and shrimp is pink. Remove from heat and brush with reserved sauce. Serve immediately.
